Waffle Sundae Anyone?

As the leaves are changing colors and the temperature in the air has dropped, I've noticed my body craving warm foods. Last week a bowl of Greek yogurt with fruit & nut butter sounded so "cold". But thanks to my kids, we had a stash of protein waffles in the freezer. I toasted two up and topped them with my usual Greek yogurt combo. This new morning staple is packed with protein and keeping me full on these beautiful fall days. .



Ingredients

2 buttermilk protein waffles (365 by Whole Foods or Kodiak)

3/4 cup nonfat plain Greek yogurt

1 tablespoon natural peanut butter or other nut butter

splash of vanilla extract (optional)berries of your choice


Preparation

Simply heat the waffles in a toaster/convection oven.

Spread peanut butter on each waffle. Top with yogurt (with optional vanilla extract) and berries. *Make it yours- toppings could include shredded coconut, chopped nuts, chocolate chips, bananas, cinnamon, apples, pumpkin pie spice, etc. The combination possibilities are endless!
